Miyoko's Phenomenally Vegan
New York Style Cheesecake

So simple to make, yet so delicious. This classically rich and dense New York style cheesecake made with our Plainly Delicious Cream Cheese is a culinary crowd pleaser.

STEP ONE
Preheat the oven to 350. F.

STEP TWO
Prepare the crust. Combine all of the crust ingredients in a
food processor and process until crumbly. Then press into the
bottom of a 8 or 9 inch springform pan lined with parchment.

STEP THREE
Place all cheesecake ingredients in a food processor and process
until smooth and creamy, about 1 minute. Alternatively,
place all but the last three ingredients in a large bowl and
use an electric mixer or a wooden spoon to mix well.

STEP FOUR
Add the final three ingredients – the agar, vanilla extract,
and lemon zest, and mix well.

STEP FIVE
Pour cheesecake mixture onto the prepared crust. Bake for about 50 minutes, until lightly browned on top.

STEP SIX
Let cool completely, then place in the refrigerator
for several hours or overnight before serving.

STEP SEVEN
Enjoy plain, or top with your favorite seasonal berries and a light sprinkle of powered sugar.

Let the cream cheese soften at room temperature to make it easier to cream.
