AGED SMOKED ENGLISH FARMHOUSE

Our cheesemakers cold-smoke each wheel with hickory chips, then age them for over four weeks to craft a deliciously smoky, intensely flavorful, and deliciously smooth cheese.

Drink with: Pairs well with a deep, dry red like Cabernet Sauvignon.

Eat with: Walnuts are a perfect crunchy compliment to this cheese.

Top with: A sweet jam stands up to this cheese's robust flavor.

Plate with: Sweet, dried apricots are the perfect flavor to pair with this cheese's bold smokiness. 

AGED SHARP ENGLISH FARMHOUSE

We age this cheese for over 30 days, which gives it an intensely flavorful and deliciously smooth profile. Sharp and bold with savory, cheddar flavors at play.

Drink with: Pairs wonderfully with a glass of Pinot Noir.

Eat with: Slice and enjoy on top of toasted crostini for a crunchy, savory bite.

Top with: An ideal combo for our Sharp Farmhouse is the deep, tangy flavors of stone ground mustard.

AGED BLACK ASH

Our cheesemakers hand-coat each wheel in a layer of vegetable ash and then age them for over four weeks. Deliciously smooth and remarkably balanced, it's striking black color makes it a stand out on any plate.

Drink with: The earthy, mineral notes of this cheese pair nicely with a glass of dry Rosé.

Eat with: Slice and enjoy on top of a light cracker. Our favorites are from Rustic Bakery.

Top with: Lemon Marmalade adds the perfect citrusy zing to this well-balanced cheese.
